    Ingredients:

    4 medium sweet potatoes
    1 tablespoon olive oil
    1 cup cooked chicken, diced
    6 slices bacon, chopped
    1 cup mushrooms, sliced
    1 small onion, chopped
    2 cloves garlic, minced
    1/2 cup shredded cheddar cheese
    1/4 cup sour cream
    1 teaspoon dried thyme
    Salt and pepper to taste
    Fresh parsley for garnish (optional)
    Directions:

    Preheat your oven to 400°F (200°C). Pierce the sweet potatoes with a fork and place them on a baking sheet. Bake for 45-60 minutes, or until tender.
    While the sweet potatoes are baking, heat olive oil in a skillet over medium heat. Add the bacon and cook until crispy. Remove with a slotted spoon and drain on paper towels.
    In the same skillet, add the chopped onion and cook until translucent. Add the mushrooms and garlic and cook until the mushrooms are tender. Stir in the diced chicken and cook until heated through. Season with thyme, salt, and pepper.
    Once the sweet potatoes are done, let them cool slightly. Slice them open and gently fluff the insides with a fork.
    Divide the chicken, bacon, and mushroom mixture evenly among the sweet potatoes. Top each with a sprinkle of shredded cheddar cheese.
    Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
    Remove from the oven and top with a dollop of sour cream and fresh parsley if desired. Serve hot.
