Ingredients:
1 large onion, thinly sliced
6 slices bacon, cooked and crumbled
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon black pepper
2 large eggs
1/2 cup milk
1/4 cup melted butter
1 tablespoon fresh chives, chopped (optional, for garnish)
Olive oil (for roasting and greasing)
Instructions:
Preheat oven to 400Β°F (200Β°C). Place the sliced onions on a baking sheet, drizzle with olive oil, and toss to coat. Roast for 15-20 minutes, flipping halfway through, until the onions are tender and slightly caramelized.
Cook bacon: While the onions are roasting, cook the bacon in a skillet over medium heat until crispy. Remove, crumble, and set aside.
Prepare dry ingredients: In a bowl, whisk together the flour, baking powder, baking soda, salt, and pepper.
Mix wet ingredients: In a separate bowl, whisk together the eggs, milk, and melted butter.
Combine: Add the wet ingredients to the dry ingredients and stir until just combined. Gently fold in the roasted onions and crumbled bacon.
Cook the cakes: Heat a lightly greased skillet or griddle over medium heat. Spoon about 2 tablespoons of batter per cake into the skillet, flattening slightly with the back of a spoon. Cook for 2-3 minutes per side, until golden brown.
Serve: Arrange the cakes on a plate and garnish with chopped chives if desired. Serve warm, with a side of eggs or a drizzle of maple syrup for extra flavor
