Dandelion and Nettle Cake

Ingredients:
- 1 cup fresh nettle leaves, lightly blanched and chopped
- 3/4 cup dandelion petals (yellow only, no green bits)
- 1/2 cup plant-based milk or regular milk
- 1 tablespoon lemon juice
- 1/2 cup honey or maple syrup
- 1/3 cup neutral oil (like sunflower or canola)
- 2 large eggs or flax eggs (2 tbsp ground flax + 6 tbsp water)
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour (or use half whole wheat)
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon (optional)
- Zest of 1 lemon

Directions:
1. Start by blanching the nettles: Bring a small pot of water to a boil, toss in the nettle leaves, and blanch for just 1 minute—this will take away that sting! Drain, let cool, squeeze out excess water, and finely chop.

2. Preheat your oven to 350°F (175°C). Get your loaf pan or an 8-inch round cake pan ready by greasing it and lining with parchment paper.

3. Time to mix those wet ingredients! In a bowl, combine the milk and lemon juice, letting it sit for about 5 minutes until it’s slightly curdled. Then stir in the honey, oil, eggs, and vanilla until everything's well blended.

4. Now for the greens! Gently fold in the chopped nettles, dandelion petals, and fresh lemon zest, bringing a burst of color and flavor to your batter.

5. In another bowl, whisk all the dry ingredients together: flour, baking powder, baking soda, salt, and cinnamon (if you’re feeling adventurous).

6. Combine the wet and dry mixtures, stirring until just combined. Be careful not to overmix! Pour the batter into your prepared pan and smooth the top with a spatula.

7. Bake in your preheated oven for 40-50 minutes, or until a toothpick inserted into the center comes out clean—your kitchen will smell divine!

8. Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack. Enjoy it as is or treat yourself by drizzling a lemon glaze or adding a dollop of yogurt or cream on top.

Tip: For that zesty lemon glaze, mix 1/2 cup powdered sugar with 1–2 tablespoons of lemon juice and drizzle it over the cooled cake!
