📋 Ingredients:
For the Crust:
🍪 2 cups (240g) graham cracker crumbs

🧀 16 ounces (452g) full-fat cream cheese, at room temperature
🍚 ¼ cup (48g) granulated sugar
🍋 1 tablespoon fresh lemon juice
🍦 1 teaspoon (5ml) pure vanilla extract
🥛 1 cup (236ml) heavy whipping cream
🍚 ½ cup (65g) powdered sugar
🍓 2 tablespoons strawberry Jello mix
For the Topping:

🍚 ½ cup (65g) powdered sugar
📝 Instructions:
1️⃣ Prep the Strawberries: Wash, dry, and remove stems from the strawberries. Dice 1 cup of strawberries into small pieces and chop the remaining lengthwise. Pat dry with a paper towel. 🍓
2️⃣ Make the Crust: Grind the graham crackers into fine crumbs using a food processor or blender. Combine with melted butter and stir until crumbs are coated. Press into a 9×9 pan and refrigerate. 🍪
3️⃣ Prepare Whipped Cream: Chill the mixing bowl and beaters for 5-10 minutes. Beat the heavy cream until soft peaks form. Add powdered sugar and continue beating until stiff peaks form. Set aside. 🥄
4️⃣ Make the Cheesecake Filling: Beat cream cheese, granulated sugar, lemon juice, and vanilla extract until smooth and creamy. Mix in prepared whipped cream and stir until well combined. 🧀
5️⃣ Divide the Filling: Divide the cheesecake mixture in half. Add strawberry Jello mix and 1 cup of diced strawberries to one half and mix to combine. 🍓
6️⃣ Assemble: Layer the sliced strawberries over the graham cracker crust, overlapping and filling gaps. Spread the plain cheesecake filling over the strawberries, followed by the strawberry cheesecake filling. 🍰
7️⃣ Top with Whipped Cream: Prepare the second batch of whipped cream. Decorate using a piping bag or spread evenly over the top. Cover with plastic wrap and chill for 4-6 hours before serving. 🎂
