KFC COPYCAT MASHED POTATO BOWL
Serves 4
INGREDIENTS
24 ounce bag of frozen popcorn chicken
1 batch mashed potatoes (use my fluffy mashed potatoes recipe or storebought)
2 .87 ounce packets brown gravy mix
2 ¼ cups cold water
¼ teaspoon garlic powder
¼ teaspoon onion powder
1 cup frozen corn
1 cup shredded cheddar cheese
Salt and pepper to taste
INSTRUCTIONS
1. Cook popcorn chicken according to package directions.
2. In a small saucepan add the gravy packets, garlic and onion powders, and a pinch of black pepper. Whisk in the water and bring to a boil over medium high heat. Boil for one minute. Taste to adjust seasoning. Remove from heat, and set aside.
3. Place the corn in a microwave safe bowl with a tablespoon of water and cover with plastic wrap or a microwave safe lid. Microwave for 1 – 1 ½ minutes, or until heated through, stirring once during cooking. Toss with a pinch of salt.
4. To serve; spoon about 1 cup of mashed potatoes into the bottom of a bowl. Top with 6 oz of the chicken, a few tablespoons of shredded cheese, ¼ cup of corn, and drizzle with gravy.
