Spaghetti and meatballs are one of my favorite comfort meals πŸ’• these meatballs are made with currants and pine nuts and taste delicious with homemade tomato sauce or keep it simple and use store bought like I did on Sunday 😜 recipe below πŸ‘‡

Meatballs:
2 tbsp heavy cream or whole milk
Β½ c breadcrumbs plus more if necessary
Β½ c freshly grated Parmesan cheese
1 shallot peeled and minced
3 cloves garlic peeled and minced
2 eggs beaten
ΒΌ c pine nuts, crushed
ΒΌ c dry currants
Β½ c freshly chopped parsley
1Β½ lbs ground beef
Salt and pepper
2 tablespoons neutral cooking oil

For serving:
32 oz jar of your favorite tomato sauce
12 ounces pasta of your choice
Salt, pepper, crushed red pepper, and sugar to taste

In a mixing bowl combine the breadcrumbs with the milk and let stand for 5 minutes. Add Parmesan, shallot, garlic, eggs, pine nuts, currants, and chopped parsley and mix to combine. Add ground meat and season liberally with salt and pepper. Work with your hands, being careful not to over-mix, until the all the ingredients are combined.

Spoon out a heaping tbsp of the mixture and roll it into a meatball, being careful not to overwork the meat, and transfer to a plate. Form the rest of the mixture into meatballs. Set aside.

In a wide pot, heat the oil over medium heat until hot and shimmering. Add meatballs, cooking in batches if necessary, in an even layer. Cook for 3-4 mins per side until well-browned all over, about 15 minutes total. Remove meatballs from the pot and transfer to a plate. Wipe out the excess oil from the pot, leaving any fond in the pot.

Heat 1 teaspoon olive oil in the pot over medium heat until very hot. Add the tomato sauce and bring to a boil, lifting up any fond stuck to the bottom of the pot. Season with salt, pepper, crushed red pepper, and a pinch of sugar if needed.

Add the meatballs to the sauce and cover and simmer over low heat for 30 mins.

While the sauce is simmering, prepare the pasta according to package instructions.

Toss the pasta with the sauce and serve with the meatballs. Enjoy!
