YELLOW THAI CURRY 💚
A Thai curry of any colour is absolutely delish, but I always add far too much curry paste🔥🔥
Ingredients
Green beans
Sugar snap peas
Red pepper, chopped
1 block @tofoo , cubed
1 dessert spoon @maeploy_kitchen curry paste
1 tin coconut milk
Method
- Stir fry the veg for approximately 5 minutes until they begin to soften
- Add the tofu and continue for another 5 minutes or so
- Add the curry paste and stir to coat the vegetables and tofu
- Add the coconut milk and cook over a medium heat for 10 minutes until heated through and beginning to reduce a little (if you want it thicker, add a little cornflour slurry)
- Serve with steamed rice and garnish with a slice of lime, sliced fresh red chilli and black sesame seeds
