Indian Style Chilli Tofu🌶️

Recipe:
Ingredients:
- 400g firm tofu, pressed and cubed
- 2 tbsp cornflour
- 2 tbsp sunflower oil, for frying
- 1 red onion, sliced
- 1 red bell pepper, sliced
- 2 garlic cloves, minced
- 1-inch piece of ginger, grated
- 1 green chilli, finely chopped (adjust to heat preference)
- 400g can of chopped tomatoes
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/2 tsp garam masala
- 1/2 tsp red chilli powder (adjust to heat preference)
- Salt to taste
- Fresh coriander, chopped, for garnish
Method:
1. Toss the tofu cubes with cornflour until evenly coated. This will help to create a crisp exterior when fried.
2. Heat oil in a pan over medium-high heat. Fry the tofu until golden on all sides. Remove and set aside on a paper towel to drain excess oil.
3. In the same pan, add a little more oil if necessary and sauté the onion and bell pepper until slightly soft.
4. Add garlic, ginger, and green chilli. Cook for another minute until aromatic.
5. Stir in the tomatoes and all the spices, cooking for a few minutes until the tomatoes break down into a sauce.
6. Return the tofu to the pan, tossing gently to coat in the sauce. Simmer for 10 minutes.
7. Season with salt and adjust the spices to your taste if necessary.
8. Garnish with fresh coriander before serving.
