Garlic & Ginger Chilli Chicken

What an absolute winner!

RECIPE - serves 4 (0.5 - plus 1 extra if you add a tsp of sesame seeds)

3 large chicken breasts diced
1 tbsp grated ginger
3 cloves of garlic, crushed
150g sugar snaps
1 onion, halved and sliced
1 pepper, sliced
1 heaped tsp xanthum gum
1 tbsp of agave nectar (1.5)
1 tbsp of dark soy sauce
2 tbsp of light soy sauce
1tsp chilli flakes / or fresh diced chilli
125ml water
Sesame seeds optional

Rice & griddled pak choi to serve

Combine the water, soy, agave, chilli flakes and xanthan gum - and save for later

Add the ginger, garlic and chicken and fry until slightly golden.

Add the onion, peppers and sugar snaps and cook for approx 5 mins.

Add the sauce, stir, and heat until sauce starts to thicken

SERVE with rice & #speedfood and a sprinkle of sesame seeds (optional)
