1 tbsp neutral oil
1 lb ground turkey
3 ribs celery with leaves diced
1 yellow onion peeled and diced
2 tbsp butter
1 tsp crushed red pepper
1 tsp dry thyme
½ tsp celery salt
½ tsp fennel pollen optional
2 15-oz cans great northern beans drained
5 c water or stock
5 oz baby arugula or spinach
Salt and pepper
Garlic-dill oil:
1 c neutral oil
10 cloves garlic peeled and lightly crushed
1 c loosely packed dill

Heat 1 tbsp oil in a wide pot over medium-high heat. Add turkey and cook, breaking it up as it cooks, for 15 mins until browned and cooked through. Add salt and pepper and transfer to a bowl.
Add celery and onion to the same pot and cook over medium-high heat for 6–8 mins until soft.
Melt butter into the aromatics. Once bubbly, add crushed red pepper, thyme, celery salt, and fennel pollen. Cook 1 min or until fragrant. Add salt and pepper.
Add drained beans to the pot along with the cooked turkey and stir to combine. Pour in water or stock and bring to a boil. Reduce heat and simmer for 30 mins. Taste and season. Stir in arugula and cook 5 mins until wilted. Turn off the heat.
While the greens and beans are simmering, prepare the garlic-dill oil. Pour the oil into a small saucepan and turn the heat to medium-low heat. Add crushed garlic and dill and cook, stirring occasionally, for 10 mins or until fragrant. Turn off heat and let stand for 5 mins.
Transfer the mixture to a food processor or blender and pulse until completely blended. Transfer to a bowl and add with salt. See note in comments.
Ladle the greens and beans into shallow bowls. Drizzle the garlic-dill oil on top. Enjoy!
