    • All-purpose flour: 1 cup (125g)
    • Brown sugar: 1 cup (200g)
    • Eggs: 2
    • Melted butter: ½ cup (120g)
    • Vanilla extract: 1 tbsp
    • Salt: a pinch
    • Chopped pecans: 1 cup (about 120g)

    Optional Add-ins
    • A pinch of cinnamon
    • A splash of bourbon (½ tsp) for flavor depth
    • Extra pecans for topping

    Instructions

    Mix flour, brown sugar, and salt in a bowl.
    Whisk eggs, melted butter, and vanilla in another bowl.
    Pour the wet mixture into the dry ingredients and stir until just combined — the batter will be thick and sticky like pecan pie filling.
    Fold in the chopped pecans.
    Grease your muffin tin well (these muffins are sticky and buttery).
    Scoop the batter into each cup, filling them about ¾ full.
    Top with extra pecans for a beautiful finish.
    Bake at 180°C (350°F) for 15–20 minutes, until the tops are golden and the centers are set.
    Cool slightly before removing so they don’t break apart — the inside is moist and gooey like pecan pie.
