Bismillah. @homemade_addict2 1. Heat 1/2 cup oil, add 1 sliced onion, 2 bay leaves, 2 elachi, 2 cloves and 2 peppercorns
2. Once onion is brown , add your chicken pieces and let the chicken brown in the oil
3.When the chicken is browned nicely add : 1 heap tsp crushed garlic 1 tsp jeero powder 1 tsp black pepper 1 tsp salt 1 sachet tomato paste 1 big tomato blended Mix chicken well with spices , let chicken infuse with spices for a few minutes then add enough water to cover chicken, close and let chicken cook about 20-25 minutes.
Remove chicken , set aside.
4. Add 2 and 1/2 cups of washed rice to the remaining water and spices from the chicken , taste for salt add more if you need , add more water if u need more to cover your rice. Close with lid and let rice cook in that water.
5. Separately heat some oil, fry sliced carrots , remove , then fry about 1/2 cup of raisins until they puff up and set aside. When rice is done , fluff up and put carrot and raisins over rice.
6. Put your chicken on a baking tray, grill in oven until charred nicely then add ontop of rice. Serve with spicy tomato salsa. #fridaylunch #jummahmubarak #southafricahalaal #lunchidea #dinnerideasُ #chickenza
