    For the Cheesecake Filling:
    - 8 oz cream cheese, softened
    - 1/4 cup granulated sugar
    - 1 large egg
    - 1/2 teaspoon vanilla extract
    For the Topping:
    - White chocolate, melted (optional)

    Instructions:

    1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line with mini cupcake liners.
    2. Prepare the Red Velvet Batter: In a mixing bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt. In another bowl, mix buttermilk, vegetable oil, egg, vanilla extract, and red food coloring. Combine the wet and dry ingredients until just mixed.
    3. Make the Cheesecake Filling: In a separate bowl, beat the softened cream cheese, sugar, egg, and vanilla extract until smooth.
