In a pan roast coconut until golden brown and let it cool. In a bowl cream margarine, oil and sugar. Add egg, vanilla essence, golden syrup and mix until combined. Add flour, coconut, ginger powder, salt, baking powder, bicarbonate of soda and mix until a soft dough is formed. Roll out your dough on a floured surface and scrape with a fork. Cut your dough, transfer to a tray lined with baking paper and bake for 12-15 minutes or until golden brown. Remove from the oven and cool.
