Golden Coconut Ginger Chocolate Delight

    3 cups (750 ml)cake flour
    1 cup (250ml)Castor sugar
    200g wooden spoon margarine
    ⅓ cup (80ml)canola oil
    1 cup (250ml)roasted dessicated coconut
    1 large egg
    ½ tablespoon (7.5ml)baking powder
    1 teaspoon (5ml)bicarbonate of soda
    1 teaspoon (5ml)vanilla essence
    2½ tablespoons (45ml)golden syrup
    ¼ teaspoon (1.25ml)salt
    1 tablespoon (15ml)ginger powder
    1 chocolate slab

    In a pan roast coconut until golden brown and let it cool.
    In a bowl cream margarine, oil and sugar.
    Add egg, vanilla essence, golden syrup and mix until combined.
    Add flour, coconut, ginger powder, salt, baking powder, bicarbonate of soda and mix until a soft dough is formed.
    Roll out your dough on a floured surface and scrape with a fork.
    Cut your dough, transfer to a tray lined with baking paper and bake for 12-15 minutes or until golden brown.
    Remove from the oven and cool.
    Melt your chocolate and sandwich your biscuits
