🍃Fusilli with an easy tomato-mushroom sauce and garlicky breadcrumbs🍃

For this delicious and easy sauce you'll need:
•500g pasta
•Olive oil
•2 cups of breadcrumbs
•2 + 3 cloves of garlic, minced
•1 small onion, finely chopped in the food processor
•250g mushrooms, finely chopped in the food processor
•5 tbsp. tomato paste
•2 1/2 tsp. sugar
•1 tbsp. dried oregano
•salt
•1 tsp. chili flakes

•Bring a pot with water to a boil and cook the pasta according to the package instructions •Meanwhile heat 2 tbsp. olive oil in a non-stick pan over medium heat
•Add the 2 minced garlic cloves and fry them in the oil for about 1 minute. Then, add the breadcrumbs to the pan and fry them for about 2-3 minutes, stirring occasionally, until they're golden
•Transfer the breadcrumbs to a bowl and heat another 3 tbsp. of olive oil in the pan
•Add the finely chopped onion and cook it for 1 minute, before adding the other 3 cloves of minced garlic and the finely chopped mushrooms
•Cook everything for about 2 minutes or until the mushrooms are very soft
•Add tomato paste, sugar, dried oregano, some salt, chili flakes and about 2 cups of hot pasta water
•give everything a good stir and let the sauce thicken for about 1-2 minutes
•drain the pasta and add it to the sauce with your breadcrumbs
•Mix everything very well and add more salt and / or olive oil if needed
