Vegan Pasta Salad
Ingredients:
Pasta
Drained and rinsed chickpeas
Black olives
Bell pepper
Red onions
Grape or cherry potatoes
Cucumber
Fresh parsley
Olive oil
Apple cider vinegar
Dried oregano
Garlic powder
Red pepper flakes
Salt and pepper
Lemon
Instructions
1. Cook the pasta as given on the package. Boil it well and drain it.
2. For assembling, take some pasta in a bowl.
3. Add tomatoes, bell pepper, olives, red onion and parsley.
4. Pour the dressing on the top and toss to coat.
5. Keep it in refrigerator for some time. Add more vinegar and oil as needed.
6. Add a sprinkle of almond parmesan for the flavor.
7. Enjoy!
