Stuffed peppers were one of my favorite childhood meals, which my mom used to make all the time before I went vegetarian/vegan. I was super lucky that she was willing to veganize them for me after I transitioned to veganism. Her recipe has been modified it to create these plant-based, drool-worthy, ‘cheesy’ vegan stuffed peppers! They’re filling, warm, comforting, and so easy to make!
Here’s what you’ll need:
- Olive Oil
- Bell Peppers
- Dry White Rice
- Veggie Broth
- Baked Tofu (recipe included)
- Vegan Mayo, Cheddar Cheese & Cream Cheese
- Jarred Pimento Peppers
- Garlic & Onion Powder
- Smoked Paprika
