Roasted red pepper and pumpkin gnocchi!
Ingredients-
- 1 pumpkin- peeled and chopped
- 1 red pepper- de seeded and chopped
- 1 onion- sliced
- 3 garlic cloves
- 1tbsp smoked paprika, chopped garlic, chilli flakes, turmeric, tomato puree
- 1 jar @boldbeanco white beans
- 3tbsp @nushfoods chive cream cheese
- 200ml @plenishdrinks almond milk
- gnocchi
- roasted tomatoes
- chilli flakes
Method-
💫heat your oven to 180*c. Drizzle some olive oil on a tray, add your pumpkin, pepper, onion and garlic. Drizzle over some more oil and cook until soft. About 30-35 mins.
💫add to a blender with all of your other ingredients and blend until smooth.
💫pour into a saucepan along with the butterbeans to heat up for a few minutes.
💫cook your gnocchi then add into the pan. Give everything a big mix then serve!
