10-Minute Peanut Butter Curry 🥰
Recipe:
Ingredients for 4 portions:
▪️2 tbsp oil
▪️2 garlic cloves (crushed)
▪️1 red onion (roughly diced)
▪️1 tsp paprika
▪️1/2 tsp ground coriander
▪️1/2 tsp cayenne pepper
▪️Pinch of chilli flakes
▪️2 cans chickpeas (400g x2)
▪️4 Tbsp peanut butter (crunchy or smooth)
▪️1 tsp veg stock (or 1/2 cube)
▪️2 tbsp tomato puree
▪️Juice Lime
▪️1 can coconut milk
▪️Handful spinach (optional)
Method:
1️⃣Heat a large pot on a medium heat with oil, crushed garlic onion then fry for a couple minutes
2️⃣ Now add the spices + drained chickpeas + peanut butter + veg stock powder + tomato puree + lime juice + coconut milk and cook on a high heat for roughly 6-7 minutes until it thickens (making sure to stir)
3️⃣Finally take off the heat and add in the spinach (optional) and stir until it wilts.
