👉Ingredients:
For the Chocolate Sponge Cake
• 1 ½ cups all-purpose flour
• 1 cup sugar
• ½ cup cocoa powder
• 1 tsp baking powder
• 1 tsp baking soda
• ½ tsp salt
• ½ cup oil (vegetable or sunflower)
• 1 cup milk (room temp)
• 1 tbsp vinegar or lemon juice
• 2 eggs (room temp)
• 1 tsp vanilla extract
For the Filling & Decoration
• 2 cups whipping cream (chilled)
• ½ cup powdered sugar
• 1 tsp vanilla extract
• 1 cup cherries (fresh, canned, or preserved)
• 2–3 tbsp cherry syrup (from canned cherries or sugar syrup)
• Chocolate shavings/curls (for garnish)
💁♂️Instructions:
Step 1: Bake the Sponge
1. Preheat oven to 180°C (350°F). Grease and line two 8-inch round pans.
2. Mix milk with vinegar/lemon juice and set aside for 5 minutes (buttermilk).
3. In a bowl, sift flour, cocoa, baking powder, baking soda, and salt.
4. In another bowl, whisk eggs, sugar, oil, and vanilla.
5. Add buttermilk, then fold in dry ingredients until smooth.
6. Pour into pans and bake 30–35 minutes, or until a toothpick comes out clean.
7. Let cool completely, then slice layers if needed.
Step 2: Whip the Cream
• Beat chilled cream, sugar, and vanilla until stiff peaks form. Keep cold.
Step 3: Assemble the Cake
1. Place one sponge layer on a plate. Brush with cherry syrup.
2. Spread whipped cream and scatter cherries.
3. Place the second layer on top, repeat with syrup and cream.
4. Frost the whole cake with whipped cream.
5. Decorate with chocolate shavings and extra cherries on top.
