Zesty Pesto Chicken & Pepperoni Skewers Delight

  • AIRFRYER RED PESTO CHICKEN & PEPPERONI SKEWERS

    Ingredients
    • 2 chicken breasts, cut into chunks
    • 2 tbsp red pesto
    • 1 tbsp olive oil
    • ½ tsp smoked paprika
    • Salt & black pepper, to taste
    • 1 red onion, cut into chunks
    • 1 red pepper, cut into chunks
    • 8 slices of pepperoni
    • Fresh parsley, chopped (for garnish)

    For the potatoes (optional side):
    • 400g baby potatoes, quartered
    • 1 tbsp olive oil
    • ½ tsp garlic granules
    • ½ tsp dried parsley
    • Salt & pepper, to taste
    • Drizzle of garlic mayo (optional)

    In a bowl, mix red pesto, olive oil, smoked paprika, salt and pepper. Add the chicken chunks and toss to coat evenly. Marinate for 15–30 mins if you can.
    Thread the chicken pieces, red onion, red pepper, and folded pepperoni slices alternately onto skewers.
    Place skewers in the airfryer basket. Cook at 190°C for 12–15 minutes, turning halfway, until the chicken is cooked through and slightly charred.
    Toss potatoes in olive oil, garlic granules, parsley, salt and pepper.
    Airfry at 190°C for 20–25 minutes, shaking halfway through.
    Plate up the crispy potatoes, drizzle with garlic mayo, and top with the chicken & pepperoni skewers. Sprinkle with fresh parsley.
