Spicy Vegan Tacos🌮 Taco Tuesday but we bought the heat🌶️

Serves 4
Ingredients • 400g extra-firm tofu (or tempeh), pressed & cubed • 2 tbsp olive oil • 2 tsp smoked paprika • 1 tsp ground cumin • 1 tsp chilli powder • 1 tbsp soy sauce • Juice of ½ lime • Pinch of salt & black pepper
Slaw & Toppings • 1 cup red cabbage, shredded • 1 cup lettuce, shredded • ½ cup cherry tomatoes, halved • 1 small carrot, grated • ½ small red onion, finely sliced • Handful fresh coriander, chopped • 8 soft flour tortillas
Creamy Lime Sauce • 4 tbsp vegan mayo • Juice of 1 lime • 1 tsp maple syrup • Pinch of garlic powder
Method 1. In a bowl, toss tofu cubes with olive oil, paprika, cumin, chilli powder, soy sauce, lime juice, salt, and pepper until coated. 2. Heat a non-stick pan over medium-high heat. Cook tofu for 8–10 mins, turning until golden and slightly crisp on all sides. 3. Mix slaw ingredients together in a large bowl. 4. In a small bowl, whisk vegan mayo, lime juice, maple syrup, and garlic powder until smooth. 5. Warm tortillas in a dry pan or oven. Layer with lettuce, slaw, and tomatoes. Add spiced tofu, drizzle with creamy lime sauce, and scatter coriander on top. 6. Serve immediately with extra lime wedges for squeezing.
