Blueberry Bliss Protein Brioche Bites

  • Blueberry protein brioche cookies 🫐

    Somewhere between a cookie and a soft bun, and I like it! Just 5 simple ingredients, no protein powder needed, and still high in protein. Perfect as a little sweet but nutritious afternoon snack or dessert :)

    Recipe (makes 4) (by @ajfoodie ):
    – 250g skyr
    – 120g flour
    – 1 egg
    – 1 tbsp honey
    – 100g blueberries

    1) Preheat oven to 180°C and line a baking tray
    2) Mix skyr, flour, egg and honey
    3) Shape into 4 disks on the tray, hollow them out slightly, and fill with blueberries
    4) Bake for 25 mins until lightly golden

    Swaps:
    – Use oat flour to make them gluten-free
    – Use 50g egg whites instead of the egg for slightly even higher protein and even lower fat
