Zesty Lemon Feta Zucchini Delight
ππ§ Hasselback Lemon Feta Zucchini
Ingredients
3 large zucchini
2 tbsp feta cheese, finely crumbled
3 tbsp fresh basil, chopped
1 tsp paprika
1 tsp garlic powder
1 tsp red pepper flakes
2 tbsp lemon juice
Olive oil, salt & pepper
Instructions
Preheat oven to 425Β°F (220Β°C).
Wash zucchini and slice thinly, leaving skin on. Donβt cut all the way through β place chopsticks on each side as a guide.
Mix feta, basil, paprika, garlic powder, red pepper flakes, and lemon juice.
Place zucchini on foil-lined baking sheet, drizzle with olive oil + lemon juice.
Carefully stuff feta mixture between slices. Add extra on top.
Bake 35 min, then broil 2β3 min until golden brown.

Serves 4
Ingredients
Salad:
4 slices nitrate-free bacon
1 lb large shrimp, peeled & deveined
1 Tbsp smoked paprika
Β½ Tbsp garlic powder
Sea salt & ground pepper, to taste
1 Tbsp avocado oil (or olive oil)
1 head romaine, washed & chopped
1 ripe avocado, diced
1 pint cherry tomatoes, halved
1 small red onion, thinly sliced
Dressing:
2 Tbsp olive oil (or avocado oil)
2 Tbsp raw honey (or sugar-free alternative)
Juice of 1 large lime
2 Tbsp fresh parsley or chives, minced
Instructions
Cook bacon until crispy, set aside and crumble.
Toss shrimp with smoked paprika, garlic powder, salt & pepper. Heat oil in a skillet, cook shrimp 2β3 min per side until pink.
In a large bowl, add romaine, avocado, cherry tomatoes, red onion, bacon, and shrimp.
Whisk together dressing ingredients until smooth.
Drizzle over salad, toss gently, and serve immediately.
