If you’re looking for a new breakfast or brunch idea for this weekend, how about these beautiful Sourdough Toasts with Whipped Lemon Feta, Pistachios, Pomegranate Seeds and Maple Fig Balsamic Drizzle! 💕
They’re the perfect mix of crunchy, creamy, salty, sour and sweet!
Whipped Lemon Feta:
1 block of vegan, feta-style cheese
1/4 cup unsweetened, plain non-dairy yogurt
Juice and zest of 1 small organic lemon
Add everything to a food processor and blend until completely smooth and whipped. Store remaining spread in the fridge.
Maple Fig Balsamic Drizzle:
Stir together equal parts of maple syrup, balsamic vinegar and fig butter.
Plus:
Toasted Sourdough
Chopped pistachios
Pomegranate seeds
(You can also use raspberries, fig or strawberry slices)
