Sweet Chili Edamame Sandwich 🌿
Here’s how to make it:
160g edamame, frozen
2 tsp tamari
1 tbsp maple syrup
1 tsp rice vinegar
1/2 tsp red chili flakes
1 tsp red chili paste
coconut oil
2 heaping tablespoons @love.legrand original vegan cream cheese
1 tbsp spring onion, sliced
a few cucumber slices
a handful of spinach (or mixed greens of choice)
2 slices sourdough, toasted
2 tsp @love.legrand vegan butter
sriracha
In a pan over medium heat, cook edamame in a tiny bit of coconut oil. When soft and cooked, add tamari, maple syrup, rice vinegar, chili flakes and red chili paste. Cook for an additional minute.
Transfer to a bowl and mash edamame a bit with a fork. Stir in cream cheese and onion.
Butter toast and top with spinach, cucumber and edamame mix. Drizzle with sriracha.
Makes 1 thick sammie.
