SPICY TOFU PASTA
Recipe:
Ingredients:
5 cups (500g) pasta of choice
1 tbsp olive oil
2 medium red onions, diced
2 red chilli peppers, de-seeded and
chopped
1/4 cup (60g) tomato paste
4 cups (300g) mushrooms, chopped
1 diced red bell pepper
14 oz (400g) crumbled tofu
2 tsp cumin
2 tsp garlic powder
1/2 cup (120g) tahini
2 tbsp nutritional yeast
Juice of 1 lemon
1/2 tsp salt
Instructions:
STEP 1: Cook the pasta according to packaging instructions. Drain when done.
STEP 2: Meanwhile, heat the olive oil in a skillet over a medium-high head and add the onion and chilli pepper. Cook for 3-4 minutes, until softened. Next, add the tomato paste, mushrooms and bell pepper. Cook for 4-5 minutes more, until the mushrooms shrink down.
STEP 3: Add the crumbled tofu, cumin and garlic powder. Cook for a few minutes more, stirring continuously.
STEP 4: In a small mixing bowl, stir together the tahini, nutritional yeast, lemon juice and salt.
STEP 5: Transfer drained pasta to a large mixing bowl together with the tofu and tahini sauce. Stir together well and serve immediately, or keep in the fridge for up to 4 days.
