20 MINUTE HEMP SEED PESTO PASTA
Recipe:
Ingredients:
2 SERVINGS GLUTEN FREE PASTA
2 CUPS FRESH BASIL
1 CLOVE GARLIC
1/4 CUP HEMP SEEDS
1/3 CUP NUTRITIONAL YEAST
1/2 LEMON ,JUICED
1/4 C WATER, TOTHIN
SALT + PEPPER ,TOTASTE
2 CUPS SPINACH
Instructions:
1. Cook pasta according to package.
2. Add all remaining ingredients, except spinach to a blender. Puree until smooth
and season to taste.
3. Drain pasta, reserving a few TBSP of pasta water and return to saucepan. Toss in
spinach with 1 TBSP of pasta water and stir until spinach wilts.
4. Add pesto to pasta and stir to combine, adding a little extra pasta water if desired.
5. Enjoy one serving hot, and place the other serving in an airtight container in the
fridge for Friday's dinner.
