Here’s a delicious lunch or dinner idea - a bowl featuring sweet and sour tofu, rice, asparagus, peas, tomatoes and avocado.
Sweet and sour tofu recipe (serves 2)
1 tbsp olive oil
5 oz extra firm tofu, cubed
1 red bell pepper, diced
2 cloves garlic, minced
2 tbsp tomato paste
2 tbsp rice vinegar
2 tbsp tamari
1 1/2 tbsp coconut sugar
1/3 cup water
1 tbsp cornstarch
Heat the olive oil in a large pan. Then, add the tofu cubes and cook for 7-8 minutes, rotating frequently, until crispy. Remove and set aside. Add the bell pepper and garlic, cooking for 5-6 minutes, until softened. Meanwhile, make the sauce by whisking together the tomato paste, rice vinegar, tamari, and coconut sugar. In a different bowl, whisk together the water and cornstarch. Add the tofu back to the pan together with the sauce and the cornstarch slurry. Stir for a few minutes until the sauce thickens, then serve.
