Mexican Cumin-Lime Cauliflower Rice & Habanero Shrimp🍤🍋🍅🍄🥑
The Process:
1/2 chopped onion
4 cloves minced garlic
1/2 chopped red pepper
1/2 cup chopped mushrooms
1 cup chopped cabbage
Sauté for about 5 minutes until veggies soften.
Heat 1 tablespoon coconut oil over medium high and add 3 cups cauliflower rice.
Add 2 teaspoon coconut aminos, 1/2 teaspoon each of salt, garlic powder, onion powder, chipotle chili powder and paprika, 1 teaspoon cumin, 1 tablespoon Lime juice, 1/3 cup chopped Cilantro.
Toss a few times over the heat and cook for another 2 minutes.
Serve with 1 Avocado over Rocket leaves or choice leafy greens.
Top with shrimp seared in coconut oil, coconut aminos and some habanero sauce (2 minutes per side on medium high).😍👌
