Summery Vanilla Overnight Oats with a sweet juicy nectarine 🍑

(Serves 2)
Vanilla Overnight Oats:
- 80g rolled oats
- 2tsp chia seeds
- 220g dairy-free milk (I used soya)
- 1tsp vanilla extract
- 1-2tbsp maple syrup
- 2tbsp dairy-free yoghurt
- desired toppings
Method:
1. Pour your oats and chia seeds into a clean empty jar or a bowl, mix together.
2. Pour in your dairy free milk until it just covers the oats, then add in the maple syrup, coconut yoghurt & vanilla. Mix everything up until combined.
3. Cover the bowl with clingfilm or pop a lid on the jar and keep it chilled in the refrigerator overnight for at least 4hrs until it has thickened.
4. Add your desired toppings in the morning, extra coconut yoghurt, drizzle with more maple syrup (if you want)! Enjoy!!
