Summery Vanilla Overnight Oats with a sweet juicy nectarine 🍑

(Serves 2)⁣⁣
Vanilla Overnight Oats:⁣⁣
- 80g rolled oats⁣⁣
- 2tsp chia seeds⁣⁣
- 220g dairy-free milk (I used soya)⁣⁣
- 1tsp vanilla extract ⁣⁣
- 1-2tbsp maple syrup⁣⁣
- 2tbsp dairy-free yoghurt ⁣⁣
- desired toppings⁣⁣

Method:⁣⁣
1. Pour your oats and chia seeds into a clean empty jar or a bowl, mix together.⁣⁣
⁣⁣
2. Pour in your dairy free milk until it just covers the oats, then add in the maple syrup, coconut yoghurt & vanilla. Mix everything up until combined.⁣⁣
⁣⁣
3. Cover the bowl with clingfilm or pop a lid on the jar and keep it chilled in the refrigerator overnight for at least 4hrs until it has thickened.⁣⁣
⁣⁣
4. Add your desired toppings in the morning, extra coconut yoghurt, drizzle with more maple syrup (if you want)! Enjoy!! ⁣⁣
