@homemade_addict2 1kg lamb meat (you can use chicken too) 2 large onions sliced 4 tomatoes chopped into little pieces or 3/4 tin tomato
Grind in chopper 5 garlic cloves, 3 inches ginger few green chillies
Whole garam massalas: black pepper corns few, 1 bay leaf, 1 large black cardamom, 2 small cardamom, 1 tsp of whole cumin, 1 stick cinnamon put whole spices in bowl with 4 Tbsp water leave to soak 1 & 1/2 cups oil (yes you read right it has that much oil) & 1 tbsp ghee Chilli powder salt to your taste Kashmiri chilli powder 1 Tbsp 3 potatoes cut into 1/4s Rice 3 cups
heat oil & ghee in pot, add whole garam massalas with water close lid, let spices infuse, add sliced onion fry till starts to get dark brown colour, add meat cook till starts to change colour on medium high 6min, add ginger/garlic/chilli paste mix it in cook few minutes, next add 3 tsp cumin powder 5 tsp coriander powder 1 tsp turmeric powder Add chilli powder salt to your taste, kashmiri chilli powder Mix, add tomatoes or 3/4 tin tomato with 1/2 Tbsp of tomato purée Mix well, pour in 1/2 cup water if cooking chicken for meat add 1 & 1/2 cups, close lid cook till water has evaporated on medium to low heat, cook lamb until soft cooked through pour in little extra water if needed,
Pour in 4 & 1/2 cups water chop in finely some coriander mix taste add salt if needed,boil for approximately 5min then add washed rice & potatoes, steam on medium flame until rice is cooked through..😋 The best akhni recipe I have tried absolutely delicious thank you so much for sharing your mums recipe with me @khwajafarida 🌸
