PACKED LUNCH PREP 💚
If you’re in need of some packed lunch inspo this week, then look no further - these boxes are also great to keep in the fridge for an evening meal in a hurry 🙌🥰
This week, we have the tastiest chilli and rice with an avocado garnish 🥰
Recipe
(Makes 3 lunch boxes and 3 portions for the freezer)
3 onions, diced
3 cloves garlic, crushed
1 packet @tescofood Plant Chef soya mince
2 tspn ground cumin
3 tspn paprika
2 tspn berbere spice or chilli powder
1 tspn oregano
1/2 tspn cinnamon
2 tbspn tomato purée
2 cans chopped tomatoes
1 can black beans
1 can kidney beans
3 peppers, chopped
Method
- Using a deep bottomed pan, gently fry the onions and garlic in a little oil or spray oil until softened but not browned
- Add the mince and spices, stir through and cook for a few minutes more
- Add the tomato purée, chopped tomatoes, black beans (juice as well) and the kidney beans (drained)
- Stir through
- Add the peppers, stir and gently simmer for 30 minutes or longer for a richer flavour
- Check your spice levels - add a little more if you like
Each lunchbox is 1/6 of the recipe with 100g steamed rice
