Caramel Oreo Ice Cream Cheesecake
Ingredients:
2 cups Oreo cookies, crushed
1/4 cup butter, melted
16 oz cream cheese, softened
1 cup granulated sugar
1 tsp vanilla extract
2 cups heavy cream
1 cup caramel sauce
1 cup mini chocolate chips
1 cup chopped Oreo cookies
1 cup chocolate ganache
8-10 whole Oreo cookies for garnish
Whipped cream for garnish
Directions:
In a bowl, mix the crushed Oreo cookies with melted butter. Press the mixture into the bottom of a springform pan to create the crust. Chill in the refrigerator for 30 minutes.
In a large bowl, beat the cream cheese until smooth. Add the granulated sugar and vanilla extract, and continue to beat until well combined.
In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
Pour half of the cream cheese mixture over the chilled crust. Drizzle half of the caramel sauce over the mixture, then sprinkle with mini chocolate chips and chopped Oreo cookies. Repeat with the remaining cream cheese mixture, caramel sauce, chocolate chips, and chopped Oreos.
Smooth the top of the cheesecake and freeze for at least 4 hours or until firm.
Once the cheesecake is frozen, remove it from the springform pan and place it on a serving plate. Drizzle with chocolate ganache and garnish with whole Oreo cookies and whipped cream.
