🌈🥕 Rainbow Vegetable Spring Rolls 🥕🌈
📋 Ingredients:
🫔 12 brown rice or white rice spring roll wrappers
🥒 1 large zucchini
🥕 3 large carrots
🌶️ 1 large red or yellow bell pepper
🌱 1 package sprouts of choice
🥬 ½ small red cabbage
🌿 1 bunch fresh herbs (mint, basil, or cilantro)
🥗 1 small head red lettuce, washed and dried
🍋 lime wedges (optional)
📝 Instructions:
1️⃣ Prep the vegetables and herbs: Cut zucchini and carrots into long, fine strips using a julienne peeler. Cut the bell pepper into long, fine strips. Finely shred the cabbage using a mandoline slicer or a sharp knife. Tear lettuce leaves into small pieces. Place all vegetables on a baking sheet or in small bowls. 🥒🥕
2️⃣ Fill a large bowl halfway with warm water. Dip one rice wrapper into the water briefly to soften. 🫔
3️⃣ Place the softened wrapper on a cutting board. Starting at the end closest to you, lay down a few herbs on ⅓ of the wrapper, then top with strips of each vegetable. Do not go all the way to the edges. 🌿
4️⃣ Fold the sides in like a burrito and roll tightly until you complete the roll. Place the finished spring roll on a plate. Repeat with remaining wrappers and fillings. 🌯
5️⃣ To eat, cut the spring rolls in half and serve with your choice of dipping sauce. 🍴
📌 Notes:
✔️ For an optional dipping sauce, whisk together ½ cup Hoisin sauce, juice of 1 lime, 2 teaspoons low sodium tamari, 2 teaspoons finely grated ginger, 1 tablespoon almond butter, 1 tablespoon rice vinegar, and 1-2 finely grated garlic cloves. 🧄🍋
