Recipe:
Ingredients:
- 400g firm tofu, cubed
- 2 tablespoons sesame oil
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 red onion, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon maple syrup
- 1 tablespoon sriracha (adjust to taste)
- 1 tablespoon sesame seeds
- 2 spring onions, chopped
- Salt and pepper, to taste
Method:
1. Press the tofu to remove excess water, then cut into cubes.
2. Heat 1 tablespoon of sesame oil in a large pan over medium heat. Add the cubed tofu and cook until golden brown on all sides, about 8-10 minutes. Remove from the pan and set aside.
3. In the same pan, add the remaining tablespoon of sesame oil. Add the sliced red bell pepper, green bell pepper, and red onion. Sauté until the vegetables are tender, about 5-7 minutes.
4. Add the minced garlic and cook for another 1-2 minutes until fragrant.
5. In a small bowl, mix together the soy sauce, rice vinegar, maple syrup, and sriracha.
6. Return the tofu to the pan and pour the sauce over the tofu and vegetables. Stir well to coat everything evenly with the sauce. Cook for another 2-3 minutes.
7. Sprinkle with sesame seeds and chopped spring onions. Season with salt and pepper to taste.
