🍋Ritz Carlton Lemon Pound Cake🍋
📋 Ingredients:
3 cups all-purpose flour
1 tablespoon baking powder
3/4 teaspoon salt
3 cups sugar
1 cup unsalted butter, room temperature
1/2 cup shortening, room temperature
5 large eggs
1 cup whole milk
6 tablespoons lemon juice
1 lemon, zested
📝 Instructions:
1️⃣ Preheat the oven to 350°F (175°C). Grease and flour a 10-inch Bundt or tube pan. 🧈
2️⃣ In a medium bowl, sift together the flour, baking powder, and salt. Set aside. 🍚
3️⃣ In a large bowl, cream together the butter, shortening, and sugar until light and fluffy. 🧴
4️⃣ Add the eggs one at a time, beating well after each addition. 🥚
5️⃣ Add the dry ingredients to the butter mixture alternately with the milk, beginning and ending with the flour mixture. Beat at low speed just until blended after each addition. 🍶
6️⃣ Stir in the lemon juice and zest. 🍋
7️⃣ Pour the batter into the prepared pan. Smooth the top with a spatula. 🍰
8️⃣ Bake for 55-70 minutes, or until a tester inserted into the center comes out clean. Begin checking at the 55-minute mark. 🕒
9️⃣ Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely. 🍰
📌 Notes:
✔️ For a more intense lemon flavor, you can add more lemon zest.
✔️ You can also make a lemon glaze with powdered sugar and lemon juice to drizzle over the cooled cake.
