Mediterranean Gyros Hummus Delight

  • GYROS HUMMUS PLATE 🇬🇷

    Ingredients:
    • 200g This Isn’t Chicken pieces @this.uk
    • 2 tbsp olive oil
    • 1 tsp smoked paprika
    • 1 tsp ground cumin
    • 1 tsp dried oregano
    • ½ tsp garlic powder
    • ½ tsp onion powder
    • ½ tsp chilli flakes (optional)
    • Juice of ½ lemon
    • Salt & black pepper, to taste

    For the plate:
    • 250g hummus
    • 1 small courgette, sliced into rounds
    • ½ red pepper, thinly sliced
    • ½ yellow pepper, thinly sliced
    • ½ small red onion, finely diced
    • 4 tbsp butter beans (or chickpeas)
    • Handful of rocket leaves
    • Pinch of smoked paprika (for garnish)



    Method:
    In a bowl, mix olive oil, paprika, cumin, oregano, garlic powder, onion powder, chilli flakes, lemon juice, salt & pepper. Toss in This Isn’t Chicken pieces and let sit for 15–20 mins (or longer if possible).
    Heat a griddle pan with a little oil. Char the courgette slices on both sides until golden. Set aside.
    In the same pan, fry the marinated This Isn’t Chicken until golden and slightly crispy on the edges.
    Spread a generous layer of hummus onto a large plate.
    Arrange courgettes, peppers, red onion, butter beans, and rocket around.
    Place the cooked gyros-style This Isn’t Chicken in the centre.
    Dust with smoked paprika for colour.
    Enjoy with warm flatbread or pita on the side.
