Garlic Butter Salmon with Spinach Cream Sauce

🐟 Keto Creamy Garlic Salmon
Ingredients:
4 salmon fillets (6oz each)
2 tbsp butter
2 cloves garlic, minced
1 shallot, diced
1/4 cup dry white wine (optional, adds flavor)
3/4 cup chicken stock
3/4 cup heavy cream (keto friendly)
3 cups baby spinach
2 tbsp fresh dill, chopped
Salt & pepper to taste
Lemon wedges for serving
Instructions:
Pat salmon dry, season with salt & pepper.
Sear in butter 4–5 min/side until golden. Remove & keep warm.
In the same pan, sauté garlic & shallot 2 min.
Deglaze with wine, add stock & heavy cream. Simmer until slightly thickened.
Stir in spinach until wilted. Return salmon, sprinkle dill, serve with lemon.

Ingredients
2 salmon fillets
1 avocado (diced)
1 cup roma tomato (diced)
½ cup cucumber (chopped)
½ cup red onion (chopped)
¼ cup kalamata olives (sliced)
3 tbsp feta (crumbled)
Garlic, lemon juice, parsley, oregano, olive oil, salt & pepper
Instructions
Mix onion, cucumber, olives, tomato, avocado, feta, garlic, lemon juice, olive oil, parsley & oregano → Greek salsa.
Bake salmon at 400°F (200°C) with garlic, lemon, olive oil, salt & pepper for 15 mins + broil 5 mins.
Serve with salsa on top, finish with extra lemon & sea salt. 🍋✨

🥢 Beef & Broccoli Stir Fry
Ingredients
1 lb London broil steak, thinly sliced
1 lb broccoli florets (~6 cups)
2 tbsp olive/sesame oil
Sauce: ½ cup hot water, 6 tbsp soy sauce (or coconut aminos), 2 tbsp sesame oil, 2 tbsp brown sugar (or keto sweetener), 1½ tbsp cornstarch, 4 garlic cloves, 2 tsp ginger, black pepper
Instructions
Mix sauce ingredients, set aside.
Stir-fry broccoli with 1 tbsp oil + splash of water until bright green, remove.
Cook steak in oil until browned.
Add sauce, cook until thickened.
