Keto Raspberry Cheesecake Recipe
Cheesecake Filling:
8 oz cream cheese (room temp)
1/4 cup sour cream
1/4 cup sweetener of choice
2 eggs
2 Tbsp fresh lemon juice
1 tsp vanilla extract
Crust:
2β3 cups pecans (blended finely)
2 Tbsp melted butter
3 Tbsp chocolate donut seasoning (or 1 tsp cinnamon)
2 Tbsp sweetener of choice
1 tsp vanilla extract
Raspberry Topping:
Sugar-free raspberry preserves (about Β½ jar)
Instructions:
Prepare crust: Melt butter in skillet, add pecans, seasoning, vanilla extract, and sweetener. Toast for 2β3 minutes. Press mixture into baking vessels. Chill β₯1 hour.
Prepare filling: Beat cream cheese and sweetener until smooth. Add eggs, sour cream, vanilla extract, and lemon juice. Mix well.
Assemble: Spoon filling over crust. Add warmed raspberry preserves in spoonfuls, swirl gently.
Bake: 20β25 minutes at 350Β°F (use a water bath to avoid cracking). Cool, refrigerate 2β4 hours before serving.
