    ¼ tsp salt

    1 cup buttermilk

    2 large eggs

    2 tbsp unsalted butter, melted

    1 tsp vanilla extract

    1 tbsp red food coloring

    Butter or oil for cooking

    Cream cheese glaze or syrup, for serving (optional)

    Instructions:

    Mix Dry Ingredients (5 mins):
    In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.

    Combine Wet Ingredients (5 mins):
    In another bowl, whisk buttermilk, eggs, melted butter, vanilla extract, and red food coloring until smooth.

    Mix Batter (2 mins):
    Pour wet ingredients into dry ingredients and gently stir until just combined. Be careful not to overmix.

    Cook Pancakes (15 mins):
    Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil. Pour ¼ cup batter per pancake. Cook until bubbles form on the surface and edges look set, about 2-3 minutes. Flip and cook for another 2 minutes until cooked through.
