Cheesy French Onion Meatball Subs

    Ingredients:

    1 pound ground beef
    1/2 cup breadcrumbs
    1/4 cup grated Parmesan cheese
    1 egg
    2 cloves garlic, minced
    1 teaspoon onion powder
    1 teaspoon salt
    1/2 teaspoon black pepper
    1 tablespoon olive oil
    2 large onions, thinly sliced
    1 tablespoon butter
    1 cup beef broth
    1 teaspoon Worcestershire sauce
    4 sub rolls
    1 cup shredded mozzarella cheese
    Fresh parsley, chopped (for garnish)

    Directions:

    Preheat your oven to 375°F (190°C).
    In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, garlic, onion powder, salt, and pepper. Mix until well combined, then form into meatballs, about 1 inch in diameter.
    In a large skillet, heat olive oil over medium heat. Add the meatballs and cook for 5-7 minutes, turning occasionally, until browned on all sides. Remove the meatballs from the skillet and set aside.
    In the same skillet, add the butter and sliced onions. Cook for 10-15 minutes, stirring occasionally, until the onions are caramelized and golden brown.
    Add the beef broth and Worcestershire sauce to the skillet, scraping up any browned bits from the bottom. Return the meatballs to the skillet and simmer for an additional 10 minutes, allowing the flavors to meld.
    Slice the sub rolls open and place them on a baking sheet. Spoon the meatballs and onion gravy into each roll, then top with shredded mozzarella cheese.
    Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
    Garnish with fresh parsley before serving.
