🛒 Ingredients
Chicken:

8 chicken legs 🍗

2 tbsp olive oil 🫒

1 tbsp sweet paprika 🌶️

1 tsp garlic powder 🧄

1 tsp onion powder

1 tsp dried oregano 🌿

1/2 tsp crushed chili (optional)

Salt and pepper 🧂

Vegetables:

3 medium potatoes, cubed 🥔

1 red bell pepper, diced 🌶️

1 green bell pepper, diced

1 large onion, sliced 🧅

3 cloves garlic, minced 🧄

2 tbsp fresh chopped parsley 🌿

Sauce:

120 ml chicken stock 🍲

2 tbsp tomato paste 🍅

Juice of one lemon 🍋

Preheat oven to 200°C (400°F). Toss the chicken legs with olive oil, paprika, garlic and onion powder, oregano, chili flakes, salt, and pepper. In a large baking dish, spread the diced potatoes, peppers, onion, and garlic. Arrange chicken on top. Mix together broth, tomato paste, and lemon juice, then pour over everything. Cover with foil and bake for 35 minutes, remove foil, and cook another 15 minutes until browned and tender. Finish with a sprinkle of parsley and serve warm.

Thighs or bone-in breasts are great alternatives.

Include other seasonal vegetables to mix things up.
