Chicken 🍗:
2 chicken breasts
1 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
1 tsp Italian herbs (oregano, basil, thyme)
Salt & pepper
Veggie Mix 🌶️🍄:
1 cup mushrooms, sliced
1/2 red bell pepper, sliced
1/2 yellow bell pepper, sliced
1/2 green bell pepper, sliced
1 tbsp olive oil
1 garlic clove, minced
Salt & pepper
Mashed Potatoes 🥔:
3 medium potatoes, peeled & cubed
2 tbsp butter
1/4 cup warm milk
Salt & pepper
Fresh parsley for garnish
👩🍳 Instructions:
Boil potatoes until tender, mash with butter, milk, salt, and pepper until creamy. Season chicken with olive oil, garlic powder, paprika, Italian herbs, salt, and pepper, then pan-sear 6–7 minutes per side until golden and cooked through. In another pan, heat olive oil, sauté garlic, mushrooms, and peppers until tender and slightly caramelized. Plate the mashed potatoes, add chicken on top, and spoon over the veggie mix. Garnish with parsley.
🔄 Notes & Variations:
Add a splash of white wine when cooking the veggies for extra flavor.
Swap potatoes with creamy polenta for a different side.
Use chicken thighs instead of breasts for juicier meat.
