Ingredients: 1 1/2 cups all-purpose flour 1 tsp baking powder 1/2 tsp baking soda 1/4 tsp salt 1/2 cup unsalted butter, room temperature 3/4 cup granulated sugar (adjust to taste) 2 large eggs 1 tsp vanilla extract 3 ripe bananas, mashed 4 oz cream cheese, softened 1/4 cup powdered sugar 1 tbsp vanilla extract
Directions:
Preheat oven to 350°F (175°C). Line a muffin tin with paper liners. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. In a large bowl, beat butter and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract and mashed bananas until well combined. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. In a small bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Fill each muffin cup halfway with banana batter, add a spoonful of cream cheese mixture, then top with more banana batter to fill each cup about 3/4 full. Bake for 18-22 minutes or until a toothpick inserted into the center of a muffin comes out clean. Allow muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
