Method Preheat your oven to 200°C (fan). Add potatoes, courgette, peppers and red onion to a baking tray.
Drizzle with 1 tbsp olive oil, paprika, oregano, garlic granules, salt & pepper. Toss well.
Bake for 20 minutes until the potatoes start softening.
Make space on the tray and place salmon fillets on top. Drizzle with remaining 1 tbsp olive oil, squeeze lemon juice over, and sprinkle chilli flakes + extra oregano.
Return to the oven for 12–15 minutes, until the salmon flakes and veg is golden.
Serve straight from the tray. optional extra squeeze of lemon or drizzle of chilli oil!
