Ingredients (makes 3–4 quesadillas) • 200g Quorn chicken pieces (or chicken) • 1 tbsp olive oil • 2 tbsp peri peri sauce (medium or hot) • 1 tbsp tomato purée • 1 tsp smoked paprika • ½ tsp garlic granules • Salt & pepper to taste • 120g grated mozzarella & cheddar mix • 3–4 small tortillas • Optional: chopped parsley for garnish

Method Heat oil in a pan, add @quorn_uk pieces (or chicken) cook for 6–8 mins until golden. Add peri peri sauce, tomato purée, smoked paprika, garlic, salt & pepper. Toss until coated and slightly sticky. Spread cheese on half of each tortilla → add your spicy Quorn, fold over. Cook each folded quesadilla 2–3 mins per side until crispy and the cheese melts. Brush lightly with peri peri sauce + sprinkle parsley
