Vegan Sausage & Potato Stew🍲 This is one of those hug in the bowl kind of meals, just what is needed this winter!

Ingredients:
• Olive oil • 1 onion, sliced • 3–4 garlic cloves, minced • 1 red pepper, sliced • 1 green pepper, sliced • 2–3 vegan smoked sausages, sliced • 8–10 small potatoes, sliced into rounds • 1 tin chopped tomatoes • 1 tin butter beans, drained • 1 tsp smoked paprika • ½ tsp oregano • ½ tsp chilli flakes • 500ml vegetable stock • Fresh parsley, chopped • Salt + pepper
Method: 1. Heat olive oil in a wide pan and sauté the onions until soft and golden. Add garlic and cook until fragrant. 2. Add the sliced peppers and cook until they begin to soften, letting them catch slightly for flavour. 3. Stir in the vegan sausages and allow them to brown on all sides for deeper colour and smokiness. 4. Add smoked paprika, oregano, chilli flakes, salt, and pepper, mixing well so the spices coat everything evenly. 5. Pour in the chopped tomatoes and stock, then fold in the butter beans. 6. Layer the sliced potatoes across the top, gently pressing them into the sauce so they’re partly submerged. 7. Cover the pan and simmer for 25–30 minutes, or until the potatoes are tender and the sauce thickened. 8. Uncover and let it cook for a few minutes more to deepen the flavours. Finish with chopped parsley and extra pepper.
Serve warm with crusty bread to soak up the sauce.
