Spicy Gochujang Pork Fried Rice Delight

  • GOCHUJANG PORK FRIED RICE

    Ingredients
    • 250g cooked jasmine rice (preferably cold, day-old)
    • 200g pork mince
    • 1 tbsp vegetable oil
    • 1 small onion, diced
    • 1 red pepper, diced
    • 2 spring onions, sliced (plus extra for topping)
    • 2 garlic cloves, minced
    • 1 tsp ginger paste (optional)
    • 1–2 tbsp gochujang (adjust heat to preference)
    • 1 tbsp soy sauce
    • 1 tsp sesame oil
    • ½ tsp sugar
    • Pinch of black pepper
    • Optional: ½ tbsp rice vinegar or lime juice for brightness



    Instructions
    Have your rice ready and cold. This stops it going mushy.

    Heat the vegetable oil in a pan or wok.
    Add pork mince and cook until browned. Break it up with a spoon.

    Stir in the onion, garlic, ginger, and red pepper.
    Cook for 3–4 mins until softened.

    Add gochujang, soy sauce, sugar, black pepper, and sesame oil.
    Mix until everything is coated and glossy.

    Add the cold rice. Fry on high heat for 3–4 mins, tossing well.

    Stir through the spring onions.
    Adjust seasoning: add more soy for salt, more gochujang for heat, a dash of vinegar/lime for freshness.

    Top with extra spring onions. Enjoy with chopsticks ✨
