Creamy Paprika Butter Beans with Crusty Bread Delight

  • CREAMY PAPRIKA BUTTER BEANS 🫘

    Ingredients
    • 1 tbsp olive oil
    • 1 small onion, finely diced
    • 2 garlic cloves, minced
    • 1 tsp smoked paprika
    • ½ tsp sweet paprika
    • ½ tsp dried oregano
    • 200g cherry tomatoes, halved
    • 1 × 400g @boldbeanco butter beans, drained & rinsed
    • 3 tbsp tomato purée
    • 120ml double cream (or single cream)
    • 50ml vegetable stock
    • Salt & pepper to taste
    • Fresh parsley, chopped (for topping)
    • Crusty bread to serve

    Method
    Heat the oil in a pan and fry the onions for 5 mins until soft.
    Add garlic and all the paprika + oregano. Cook for 1 min until fragrant.
    Add cherry tomatoes and cook until they soften and burst.
    Stir in the tomato purée, butter beans and stock. Simmer for 5–7 mins.
    Pour in the cream, season well and simmer for another 3 mins until thick and glossy.
    Finish with fresh parsley and serve with warm crusty bread.
