Method Heat the oil in a pan and fry the onions for 5 mins until soft. Add garlic and all the paprika + oregano. Cook for 1 min until fragrant. Add cherry tomatoes and cook until they soften and burst. Stir in the tomato purée, butter beans and stock. Simmer for 5–7 mins. Pour in the cream, season well and simmer for another 3 mins until thick and glossy. Finish with fresh parsley and serve with warm crusty bread.
